Maybe I’ll turn into a food blogger..I don’t know. But I’ve been experimenting more lately and that makes me #FuriouslyHappy.
Tonight’s attempt? Pineapple Chicken Quesadillas (minus the grilled onions because I made them and forgot they were in the microwave since I have limited counter space until it was too freaking late. Oh well) from HelloFresh’s website. The Mexican rice came from a package (Knorr’s, I think). I also made myself a cocktail (not shown)–the pineapple juice from the canned pineapple, some cranberry juice cocktail stuff I have in the fridge, juice from the other half of the lime NOT used in the pico de gallo and a splash (since I’m a super lightweight) of “silver” (I think that’s what it’s called. Somebody bought it for us on a trip to Mexico like a year ago. I used most of it over the summer to make margaritas.) tequila. I rimmed the glass with the lime and dipped it in salt, then threw all the juices, the tequila and about a cup of ice cubes into the blender until it was nice and mushed up..not too chunky but not quite entirely liquid either. Like..slushy consistency. And it wasn’t a PRETTY cocktail (it was kind of flesh-tone, actually.) but it was really freaking delicious and the perfect thing to sip on while I cooked dinner.
Now if only my husband and son would get home so we could eat because I’m freaking starving.
